Chicken: Curried Chicken Salad with Apples & Raisins
Ingredients
- 2 cups (about two 4-5 oz.) chicken breasts seasoned with parsley, thyme, lemon pepper and garlic salt
- 1/2 c. low-fat mayo (or use 1/4 c. mayo & 1/4 c. low-fat greek yogurt)
- 2 t. curry powder
- 4 t. water
- pinch of red pepper flakes, if desired
- 1 large Braeburn apple, chopped
- 2/3 c. diced celery
- 1/2 c. raisins
- 1/4 t. salt
Instructions
Season chicken and bake in oven for 50-60 minutes at 350 degrees or grill. Cool and shred or chop.
Combine mayonnaise (or mayo and yogurt combo), curry powder and water in a medium bowl, stirring with a whisk until blended. Add red pepper flakes if desired.
Stir in the chicken, apple, celery, raisins and salt; stir mixture well to combine.
Cover and chill until serving.
NOTE: Can make the chicken a head of time or use left over chicken you made from a previous meal.
