Chicken: Cherry Chicken Salad

This has the most flavor when served at room termperature
Ingredients
- 2 c. cubed cooked chicken (or turkey)
- 1/2 dried cherries (or cranberries)
- 1/4 c. chopped sliced almonds (or pecans/walnuts)
- 1/2 c. chopped celery
- 3 green onions, sliced
- lettuce or spinach leaves
- freshly ground black pepper, to taste
Dressing
- 1/2 c. low-fat mayonnaise (Kraft with olive oil)
- 1/4 c. plain yogurt
- 1 Tbls. fresh lemon juice
- 1/2 t. dried oregano
Instructions
In a large bowl, combine chicken, cherries, nuts, celery and onions; mix well.
In a small bowl, combine mayonnaise, yogurt, lemon juice, oregano and pepper; pour over chicken mixture. Mix gently.
Refrigerate, covered 1-2 hours before serving. Season with additional oregano, salt and pepper, if desired.
Serve on lettuce or large spinach leaves.
