Chicken Burrito Casserole

A low prep dinner, loaded with protein and has great flavor
You'll need to pre-cook chicken ahead of time and shred
I make my fajita mix from scratch
The fresh cilantro and juice from lime wedges really makes this dish

Ingredients

  • 1/2 c. finely diced onion
  • 1 red bell pepper, diced
  • 1 c. uncooked long-grain brown or white rice (Uncle Ben's)
  • 3 Tbls. fajita seasoning (homemade or store-bought)
  • 1/8 t. cayenne pepper (optional)
  • 3 c. chicken broth
  • 4 oz. can mild green chilies
  • 1 Tbls. olive oil
  • 2 Tbls. tomato paste (freeze remainder for another use)
  • 5 c. pre-cooked chicken, shredded
  • 1 c. corn kernels, frozen
  • 14 oz. can black beans, drained and rinsed
  • 1-1/4 c. Monterey Jack cheese, shredded

Fajita Seasoning

  • 2 Tbls. chili powder
  • 4 t. paprika
  • 4 t. oregano
  • 3 t. + 3/4 t. kosher salt
  • 1 t. onion powder
  • 1 t. garlic powder

Topping Choices

  • fresh cilantro
  • sliced green onions
  • diced avocados
  • diced tomatoes
  • low-fat sour cream (Daisy)
  • lime wedges (squeeze juice on servings)
  • salsa
  • crushed tortilla chips

Instructions

Fajita Seasoning Mix: Combine all ingredients and use 3 tablespoons for this recipe; refrigerate remainder to use another time or another way (3 tablespoons is equal to 1 packet of purchased seasoning mix).

Casserole: Preheat oven to 400 degrees.

Add onion, bell pepper, uncooked rice, fajita seasoning and cayenne (if using) to a greased 9×13-inch baking dish and stir to combine.

In a separate bowl, whisk together chicken broth, green chiles, tomato paste and olive oil until well combined. Add the broth mixture to baking dish; stir to combine with the rice mixture.

Add shredded chicken, black beans and corn to the baking dish. Give it an additional stir until well combined.

Cover the baking dish with foil and then transfer to the oven to bake for 1 hour or until all of the liquid is absorbed.

Remove the baking dish from the oven, remove the foil, and sprinkle evenly with shredded cheese.

Return the baking dish to the oven for another 5-10 minutes until the cheese has melted and is slightly golden.

Remove from the oven, allow to cool for 5-10 minutes, and serve with toppings of your choice.
