Cherry Nut Amaretto Bread

Ingredients

  • 1/2 c. butter
  • 1 c. white sugar
  • 3 eggs
  • 1/2 c. Amaretto
  • 1-1/2 c. all-purpose unbleached white flour
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 cup cherries, fresh or canned and halved
  • 1 c. chopped pecans

Glaze

  • 6 Tbls. powdered sugar
  • 6 Tbls. Amaretto liquor

Instructions

Cream butter, sugar, egg and Amaretto. Add dry ingredients and stir until well mixed. Fold in pecans and cherries. Pour into a large greased and floured loaf pan, or makes 3 mini loaves.

Bake at 350 degrees for about 50-55 minutes (40-45 minutes for mini loaves).

Loosen edges in loaf pan(s), let stand 15 minutes and then remove bread from pan(s), placing on a cooling rack; pour glaze over each loaf(s) and cool completely.

For glaze, mix powdered sugar and amaretto.
