Cherry-Chocolate Chip Biscotti

Ingredients

  • 2 eggs
  • 2 egg whites
  • 1 Tbls. canola oil
  • 2 t. vanilla extract
  • 1/4 t. almond extract
  • 3/4 c. white sugar
  • 1 c. whole wheat pastry flour
  • 1-3/4 c. all-purpose unbleached white flour
  • 1 t. baking powder
  • 1/4 t. baking soda
  • 1/4 t. salt
  • 2/3 c. dried cherries, chopped
  • 1/2 c. mini semi-sweet choc chips (or dark chocolate)

Instructions

In a small mixing bowl, beat the eggs, egg whites, oil and extracts; beat in sugar. Combine flours, baking powder, baking soda and salt. Beat into egg mixture. Stir in cherries and chocolate chips.

Divide dough in half. With lightly floured hands, shape each portion into a 12" x 3" rectangle. Place each on a baking sheet coated with nonstick cooking spray.

Bake at 350 degrees for 15-20 minutes or until lightly browned. Carefully remove to wire racks; cool for 5 minutes.

Transfer to a cutting board; cut with a serrated knife into 3/4-inch slices. Place cut side down on a clean ungreased baking sheet. Bake for 5 minutes. Turn and bake 5-7 minutes longer or until firm.

Remove to wire racks to cool. Store in an air tight container.
