Cherry & Hot Bacon Dressing Salad

Great way to use Door County dried cherries


Ingredients
- Mixed greens for 8 people (I add baby leaf spinach-stems removed, as well)
- ½ lb. (6 slices) center-cut bacon
- ½ c. (1/4 c.) sliced or slivered almonds, toasted
- ¼ c. (2 Tbls.) Cherry-De-Lite dried cherries
Dressing
- 1/3 c. or (2 Tbls. + 2 t.) Cherry De-Lite cherry juice
- 1/3 c. or (2 Tbls. + 2 t.) white wine vinegar
- 1/3 c. or (2 Tbls. + 2 t.) white sugar
Instructions
Fry bacon and reserve 2 tablespoons (1 Tbls. if only making half the dressing) of the bacon drippings in frying pan. Crumble bacon and set aside.
Dressing: To the frying pan add, cherry juice, vinegar, sugar and dried cherries. Simmer for 5 minutes while stirring.
Place lettuce on individual salad plates
Pour warm dressing over lettuce and top with reserved crumbled bacon pieces and almonds.
Serves 8
NOTE: This recipe will make 8 salads; the ingredients in parenthesis will made 4 salads
