Cheesy Hash Browns
A family favorite and great side dish to burgers, brats, grilled chicken etc.
You can also make ahead and freeze, just bake when needed. See Note below for instructions.
Ingredients
- 32 oz. pkg. Southern Style Ore Ida Hash Browns (cubes or shredded)
- 1/2 c. chopped onion
- 8 oz. low-fat sour cream (Daisy)
- 4 Tbls. butter, melted
- 1 can cream of chicken soup
- 2 c. shredded low-fat cheese (mild, sharp)
- Salt and pepper to taste
- Paprika or crushed cornflake crumbs, optional
Instructions
Mix all of the above ingredients and press into a greased 9 x 13" pan.
Sprinkle with crushed cornflake crumbs or paprika, just before baking.
Bake uncovered at 350 degrees for 1 hour.
NOTE: I often make a head (keeping the hash browns frozen, just mix into sauce and cheese mixture). Then grease (2) 9x9 foil pans and divide mixture evenly between the 2 pans. Cover with foil, wrap entire pan in saran wrap and place each pan in a ziplock bag to freeze until you want to make another time. Just thaw in refrigerator overnight and bake as directed above. Huge time saver.
