Cauliflower Tots

Great side dish to replace potatoes

Ingredients

  • 16 oz. cauliflower, minced
  • 1 egg
  • 2/3 c. bread crumbs (plain or seasoned)
  • 1 c. cheddar cheese, shredded
  • 1 c. parmesan cheese, shredded
  • 2 lg. garlic cloves, minced
  • ΒΌ t. salt
  • 2 Tbls. butter, melted

Instructions

Fill a saucepan with water and bring to a boil. Season with salt. Blanch the cauliflower in boiling water for 5 minutes. Drain and transfer to a towel; pat to dry well. Finely chop the cauliflower, or use a ricer if you have one.

In a mixing bowl, add cauliflower, egg, bread crumbs, cheeses, garlic and salt. Mix and refrigerate for 30 minutes. Add melted butter and mix in.

Spray a Teflon baking sheet with nonstick spray.

Shape the mixture into tot shapes and spread them evenly on the baking sheet. Bake at 400 degrees for 25 to 30 minutes or until golden brown.

NOTE: Eat plain, dip in ketchup, sriracha-ketchup or sriracha sauce.
