Cauliflower: Parmesan Thyme Roasted Cauliflower

Great flavor and easy to make

Ingredients

  • 1 head cauliflower, cut into florets
  • 3 Tbls. olive oil (+ 1 additional Tbls.)
  • 4 sprigs of thyme (or sprinkle dried thyme as desired)
  • kosher salt and freshly ground pepper, to taste
  • 1 medium onion, sliced
  • 4 garlic cloves, unpeeled
  • ½ c. freshly grated Parmesan cheese

Instructions

Slice onion and place in a medium bowl, along with 4 unpeeled garlic cloves. Drizzle 1 tablespoon of olive oil over all and toss to coat. Set aside.

In a large bowl, toss cauliflower florets with 3 tablespoons of olive oil and place on a large rimmed baking sheet. Season with kosher salt and pepper. Sprinkle with dried thyme or place thyme sprigs among cauliflower. Roast at 425 degrees for 15 minutes, then add onions and garlic cloves.

Continue to roast for another 15-20 minutes. Sprinkle Parmesan cheese over all and continue to roast until cauliflower is tender (10-12 minutes longer).

Serve 4

NOTE: The onions and garlic cook faster than the cauliflower so it is better to add them after the cauliflower has been roasting for a bit.
