Cauliflower: Bang Bang Cauliflower

Pairs well as a side dish with any Oriental main course.
Goes great with my Sesame Ginger Chicken

Ingredients

  • ½ head of cauliflower, cut into bite sized florets
  • 2 c. panko - Japanese bread crumbs (Kikkoman brand)
  • 2 large eggs, whisked
  • 1 Tbls. fresh parsley, finely chopped (optional for garnish)

Bang Bang Sauce

  • 2 Tbls. sweet chili sauce without chili seeds (Oriental aisle or Asian grocery store)
  • 2 t. Sriracha hot sauce
  • ¼ c. mayonnaise with olive oil (or substitute Fage Plain Greek Yogurt)
  • 1 Tbls. honey

Instructions

Line a baking sheet with parchment paper.

Dip cauliflower pieces in egg and then roll in panko until fully coated. You may need to use your fingers to press on the coating to help it stick to the cauliflower bites. Repeat until all cauliflower is coated.

Bake at 400 degrees for about 20 minutes or until coating is dark golden brown and crunchy.

To Make Sauce: While cauliflower is baking, add all sauce ingredients into a small bowl; whisk until uniform and no lumps remain.

Drizzle over finished cauliflower, reserving additional for dipping. Garnish with fresh parsley, if desired

NOTE: Could also use as an appetizer!
