Cashew Rice Pilaf
Ingredients
- 2 Tbls. butter
- 1/2 c. diced carrots
- 1/2 c. chopped onion
- 3/4 c. uncooked long grain brown rice (Uncle Ben’s)
- 1 c. golden raisins
- 1-1/2 c. chicken broth
- 1/2 t. onion powder
- 1 c. frozen peas
- 3/4 c. cooked wild rice (make ahead)
- 1/2 c. cashews
- 1-2 Tbls. thinly sliced green onions, optional
Instructions
Sauté butter, carrots, onions and uncooked long grain rice until tender; stir in raisins, broth and onion powder.
Bring to a boil, reduce heat, cover and simmer for 30 minutes or until liquid is absorbed and rice is tender.
Stir in peas, wild rice and cashews; heat through.
Sprinkle with sliced green onions before serving if desired.
NOTE: Serves 6.
