Carrot Muffins
Ingredients
- 1 large egg
- 1/2 c. milk
- 1/4 c. canola oil (or 2 Tbls. oil + 6 Tbls. ground flax seed)
- 1/2 c. white sugar
- 2 c. all-purpose unbleached white flour
- 1/2 t. baking soda
- 2 t. baking powder
- 1 t. cinnamon
- 1 c. shredded carrots
- 1/2 c. crushed pineapple (drained a bit)
- 1/2 c. raisins
Instructions
In a mixing bowl combine egg, milk, oil and sugar.
Stir in dry ingredients.
Fold in carrots, raisins and pineapple.
Divide batter evenly among muffin cups until 2/3 full.
Bake at 400 degrees for 15-20 minutes. Remove to wire rack.
NOTE: Makes 12 muffins.
