Carrot Muffins

Ingredients

  • 1 large egg
  • 1/2 c. milk
  • 1/4 c. canola oil (or 2 Tbls. oil + 6 Tbls. ground flax seed)
  • 1/2 c. white sugar
  • 2 c. all-purpose unbleached white flour
  • 1/2 t. baking soda
  • 2 t. baking powder
  • 1 t. cinnamon
  • 1 c. shredded carrots
  • 1/2 c. crushed pineapple (drained a bit)
  • 1/2 c. raisins

Instructions

In a mixing bowl combine egg, milk, oil and sugar.

Stir in dry ingredients.

Fold in carrots, raisins and pineapple.

Divide batter evenly among muffin cups until 2/3 full.

Bake at 400 degrees for 15-20 minutes. Remove to wire rack.

NOTE: Makes 12 muffins.
