Caramelized Onion Tart with Gorgonzola and Brie

The perfect appetizer. Looks elegant and tastes amazing.

Ingredients

  • 2 Tbls. olive oil
  • 1 Tbls. butter
  • 4 c. (2-3 medium) sliced onions, ¼-inch thick
  • 1 Tbls. brown sugar
  • 2 Tbls. good balsamic vinegar
  • ½ t. salt
  • ½ t. pepper
  • 8 oz. frozen puff pastry (defrosted in ref. for a few hours)
  • 2 oz. Gorgonzola cheese, diced small
  • 2 oz. chilled Brie cheese, rind removed and diced small
  • 2 Tbls. fresh tarragon
  • parchment paper

Instructions

Caramelize the Onions: Heat oil and butter in a large deep pan on medium heat. Add onions and cook for about 10 minutes, or until wilted and starting to brown.

Add brown sugar, vinegar, salt and paper. Reduce heat and cook gently uncovered for 20-25 minutes or until richly caramelized. Add a little water if the onions look like they are starting to dry out. Cool.

Roll pastry into a 10 x 14-inch rectangle (or whatever shape you want). Don't roll too thin! Place pastry on a rimless baking sheet lined with parchment paper. Prick with a fork at a couple inch increments to prevent the pastry from forming big bubbles while baking.

Spread onions over pastry, all the way to the edges of the pastry. Dot with cheeses. Sprinkle with tarragon.

Refrigerate if not baking right away.

Bake in a preheated oven at 400 degrees for 18-20 minutes or until cheese has melted and pastry is crispy. Cool 5 minutes.

Cut into wedges or squares and enjoy!
