Caramel Apple Pie

Ingredients

  • 2-1/2 c. unbleached all-purpose white flour
  • 1-1/2 t. salt
  • 1/4 c. white sugar
  • 1/2 c. butter
  • 1/4 c. water
  • 1 egg, beaten
  • 1/4 c. canola oil
  • 28 caramels, unwrapped
  • 1/2 c. evaporated milk or half-and-half
  • 8 oz. pkg. low-fat cream cheese, softened
  • 1/3 c. white sugar
  • 1 egg
  • 1/4 c. chopped walnuts

Filling

  • 6 cups baking apples (about 6 med) peeled and sliced
  • 1/3 c. unbleached all-purpose white flour
  • 1 c. white sugar
  • 1-2 t. grated lemon zest
  • 2 Tbls. lemon juice

Instructions

Crust: Combine flour, sugar and salt in a large bowl.

Cut in butter using a pastry blender or fork until crumbly.

Add oil, water and egg. Mix well until mixture forms a soft dough.

Press the dough evenly into the bottom and up the sides of an ungreased 15x10x1-inch baking pan. Set aside.

Filling: In another large bowl, combine all the apple filling ingredients. Toss lightly and spoon onto prepared crust.

Caramel Layer: In a small saucepan over low heat, combine the caramels and milk. Heat, stirring occasionally until melted. Or use microwave. Pour over apple filling.

Cream Cheese Layer: In a small bowl, combine the cream cheese, sugar and egg for topping. Beat until smooth. Spoon mixture over the apples and caramel.

Sprinkle with chopped nuts.

Bake at 375 degrees for 45 minutes or until top is golden brown. Cool and cut into serving pieces.

Cool completely before covering with foil.
