Caprese Chicken with Bacon

Ingredients

  • 8 bacon strips (center cut)
  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1 Tbls. olive oil or garlic infused olive oil
  • 1/2 t. salt
  • 1/4 t. pepper
  • 2 plum tomatoes, sliced
  • 6 fresh basil leaves, thinly sliced (more if desired)
  • 4 slices mozzarella cheese

Instructions

Place bacon on a lightly greased 15 x10 x1-inch baking pan. Bake at 400° for 8 minutes, or until partially cooked, but not crisp (if cooked too long, it will not bend to wrap around chicken). Remove to paper towels to drain.

Place chicken in a lightly greased 13 x 9-in. baking pan; brush with oil and sprinkle with salt and pepper. Top with tomato slice(s) and basil. Wrap each chicken breast in two bacon strips, arranging bacon in a crisscross.

Bake uncovered at 400° for 35 - 40 minutes or until a meat thermometer reads 170 degrees.

Top with cheese; bake 1 minute longer or until melted.
