Butterscotch Bars

My friend made these bars for one of our camping trips together.
They don’t look all that attractive, but OMG they taste so good!

Ingredients

  • 1 pkg. butterscotch chips
  • 1/2 c. butter
  • 2 c. graham cracker crumbs (32 squares)
  • 8 oz. pkg. low-fat cream cheese, softened
  • 14 oz. can sweetened condensed milk
  • 1 egg
  • 1 t. vanilla
  • 1 c. chopped pecans

Instructions

In a medium pan, melt butterscotch chips and butter. Add graham cracker crumbs; set aside 2/3 cups. Press remaining crumb mixture into a greased 9x13-inch baking pan.

In a small bowl, beat cream cheese until smooth. Beat in the condensed milk, egg and vanilla. Stir in pecans. Pour over crust. Sprinkle with reserved crumb mixture.

Bake at 325 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
