Burgers: Spicy Hawaiian Chicken Burgers

Great flavor

Ingredients

  • 2 lbs. ground chicken
  • 3-4 Tbls. unseasoned bread crumbs
  • 1/4 c. low-sodium soy sauce (Kikkoman)
  • 1 t. smoked paprika
  • 1 t. chili powder
  • 1/2 t. Lawry's seasoning salt
  • 1/2 t. ground cumin
  • 1 clove garlic, minced
  • salt & pepper to taste
  • 6 slices pepper jack cheese
  • 6 whole wheat hamburger buns
  • 6 pineapple rings (cut about 1/2" to 3/4" thick)
  • Mayo, lettuce and tomato, optional

Instructions

Combine ground chicken, bread crumbs, soy sauce, paprika, chili powder, seasoning salt, cumin and garlic. Lightly mix with your hands and divide into 6 even balls (meat will be really soft).

Carefully shape into individual patties, then lightly salt and pepper each patty. Freeze individually (wrapped in saran wrap) for easier grilling.

When ready to grill, preheat to medium heat. Coat grates lightly with oil. Remove saran wrap on each patty and grill burgers about 8-10 minutes per side. The burgers should flip easily when they are ready to turn. If they stick, give them another minute.

Top with cheese for the last 1-2 minutes of cooking time to melt. Remove to a plate and lightly cover to rest. Grill buns if desired.

For the pineapple, grill directly on grates over medium heat. Carefully turn after 1-2 minutes.

Assemble burgers with a pineapple slice and enjoy. Add mayo, lettuce and/or tomato if you prefer.
