Brussel Sprouts: Brussel Sprouts with Candied Bacon and Dried Cranberries

Probably not real healthy with the bacon and bacon grease, but the flavor is out of this world!

Ingredients

  • 4 strips center-cut think bacon
  • 1 lb. brussel sprouts
  • ½ large onion, chopped
  • 2 Tbls. butter
  • 1/2 c. toasted pecans
  • 3 Tbls. maple syrup
  • 2 Tbls. brown sugar
  • 1/3 c. dried cranberries

Instructions

Fry bacon on low heat to avoid splatters, until well done and crispy. Remove to a paper plate lined with paper towel to absorb grease. Chop or break up into small pieces and set aside. Do not drain bacon grease.

Using the leftover bacon grease, sauté chopped onions and brussel sprouts until both are soft and slightly browned. Pour onto a cookie sheet and roast for 15 minutes at 400 degrees.

After brussel sprouts have been in the oven for 5 minutes, melt butter in a small saucepan and toss in toasted pecans. Add syrup and brown sugar and combine, then add cranberries and bacon. Stir to coat everything well. Pour into medium to large serving bowl.

When brussel sprouts and onions are finished roasting, add to serving bowl and toss everything together. Serve immediately.
