Brussel Sprouts: Dijon Roasted

Ingredients

  • 2 t. Dijon mustard
  • 1-1/2 t. maple syrup
  • ½ t. garlic powder
  • 2-3 Tbls. olive oil
  • 1/3 c. red onion, sliced or wedged to at least ¼-inch wide
  • 12 oz. small to medium-sized brussel sprouts, halved or sliced

Instructions

Preheat oven to 400 degrees.

In a large bowl, whisk mustard, maple syrup, garlic powder and oil to combine. Add red onion to the mustard mixture, along with the halved Brussel sprouts. Toss to coat.

Spread Brussel sprouts in a single layer on a large baking sheet and roast for 35 to 40 minutes, until sprouts are tender and caramelized. Stir halfway through.

NOTE: Serves 2-3 (double recipe to serve 6)
