Broccoli: Grilled or Roasted in Oven

Absolutely delicious.

Ingredients

  • 6 cups fresh broccoli spears
  • 2 Tbls. plus 1-1/2 t. fresh lemon juice
  • 2 Tbls. olive oil
  • ¼ t. salt
  • ¼ t. coarse black pepper
  • 2/3 c. grated Parmesan cheese
  • 1/3 c. shaved Parmesan cheese, garnish

Instructions

Wash broccoli spears and pat dry.

In a small bowl, combine the lemon juice, oil, salt and pepper; drizzle over broccoli and toss to coat. Cover and put in refrigerate to stand for 30 minutes.

Remove from refrigerator and slowly sprinkle in grated parmesan cheese, tossing as you go along.

TO GRILL: Lightly oil a large flat grill pan with oil. Place broccoli on grill pan. Grill covered, over indirect medium heat, for about 15 minutes (stirring after 7 minutes). Grill just until tender-crisp. Don’t overcook.

ROAST IN OVEN: Place broccoli on lightly oiled (use olive oil) sheet pan. Bake at 400 degrees for about 20-25 minutes until tender crisp. Stir halfway through.

Remove broccoli to a serving bowl and garnish with shaved Parmesan, tossing gently to mix some shavings within.
