Brie with Carmelized Onion and Cherries

Ingredients

  • 8 oz. round of Brie cheese
  • 1/2 c. dried cherries (or cranberries)
  • 1 med-large Vidalia onion, chopped
  • 2 Tbls. good dark balsamic vinegar (18 yr or older)
  • 2 Tbls. butter
  • 1/2 c. brown sugar, packed

Instructions

To prepare Brie, using a sharp knife, carefully remove top rind of cheese, leaving rind on side and bottom intact.

Place Brie in a greased 9-inch pie plate and cover lightly with foil. Bake at 350 degrees for about 20-25 minutes or until cheese is melted and soft.

While Brie is warming, sauté onion in butter until tender and transparent (about 15 minutes); add brown sugar, dried cherries and vinegar. Heat until mixture caramelizes and thickens, about 5 minutes.

Remove Brie from oven and pour cherry mixture over Brie. Serve with crackers of your choice.
