Breakfast Scramble

A camping favorite
You can use any meat or veggies that you have on hand.

Ingredients

  • 3 Tbls. butter or canola oil
  • 2 baked potatoes, cooled, or approximately 2 cups frozen hash browns (cubed or shredded)
  • 1 med-large yellow onion, diced small
  • 1 c. diced peppers (green, red, yellow, orange)
  • fresh mushrooms, sliced (optional)
  • 10-12 breakfast sausages, (5-6 oz.) ham steak, 6-8 slices of fried bacon or crumbled 1/2 lb. turkey sausage
  • 6-8 eggs
  • 1 c. cheddar or Swiss cheese, shredded (optional)

Instructions

If using potatoes, bake them the day before (or a head of time). Pierce with a fork and bake at 400 degrees for 1 hour. Cool and place in refrigerator until you are ready to make; then peel and cube potatoes and set aside.

Melt butter (or use canola oil) in a large fry pan or heat oil, sauté the onions and potatoes. If using frozen hash browns, cook according to package directions.

When potatoes are half cooked, add the peppers (and mushrooms if using) and continue to fry until potatoes are browned.

In a separate fry pan, fry sausages then remove them, cut into ½-inch pieces and set aside. (If using ham steak, cut into bite-size pieces and brown a bit).

Using the same pan you fried the sausages or ham in, melt a little margarine and add the eggs; scramble until eggs are firm.

Add sausages or ham and scrambled eggs to the fry pan with the potatoes, onions and peppers. Toss and add shredded cheese if desired.

NOTE: This recipe will feed 4-6 people; you can adjust ingredients according to the number of people you need to feed. You can also substitute bacon instead of sausages or ham.
