Breakfast Casserole: Spring Brunch Bake

Ingredients

  • 8 cups cubed French bread
  • 1 bunch scallion onions, chopped
  • 2 c. cut fresh asparagus, 1-inch piece
  • 1 c. cubed fully cooked lean ham
  • 3/4 c. Swiss cheese, shredded
  • 5 egg whites
  • 4 eggs
  • 1-1/2 c. low-fat milk
  • 2 Tbls. fresh lemon juice
  • 1/4 t. garlic powder

Instructions

In a large bowl, combine the bread, onions, asparagus, ham and cheese.

Whisk the egg whites, eggs, milk, lemon juice and garlic powder; pour over bread mixture and stir until blended.

Transfer to a 9" x 13" baking dish coated with no-stick cooking spray.

Cover and bake at 350 degrees for 25 minutes. Uncover and bake an additional 10-15 minutes or until a knife inserted near the center comes out clean.

Let stand for 10 minutes before cutting and serving.

NOTE: Serves 6. Can also substitute fresh broccoli florets instead of asparagus if you prefer and use cheddar cheese.
