Breakfast Casserole: Ham & Cheddar
A no fuss recipe that is super easy to put together.
Other cooked breakfast meats, such as turkey or pork sausage and crumbled bacon
will work well in this recipe.
Ingredients
- 6 large eggs
- ½ c. milk
- ½ t. salt
- ¼ t. pepper
- 4 c. (16 oz. pkg.) frozen shredded hash brown potatoes, thawed
- 1 c. cubed fully cooked ham (7 oz. ham steak)
- ½ medium onion, chopped
- 2 c. shredded cheddar
Instructions
Whisk together eggs, milk, salt and pepper.
In a large bowl, combine potatoes, ham, onion, peppers and cheese. Transfer to a greased 2-1/2 qt. casserole dish and pour egg mixture over the top.
Don't use a really deep casserole dish or put a lid on while baking.
Bake at 375 degrees for 45 minutes. If top starts to get too brown, lay a sheet of foil loosely over the top and continue to bake an additional 10-15 minutes or until center of casserole is set and not runny.
Remove from oven and let stand 5 minutes before cutting.
Serves 6
NOTE: You can substitute Swiss cheese if preferred; and add chopped bell peppers (one color or an assortment of green, red, yellow or orange).
