Breakfast Burritos: Egg, Turkey Sausage & Spinach

Great for camping. Made July 2020 at Firefly Campground.
You can make everything in 1 large fry pan or follow instructions in recipe to make ahead and freeze.

Ingredients

  • 1 lb. bulk lean turkey breakfast sausage
  • non-stick cooking spray
  • 1 c. frozen cubed hash brown potatoes, thawed
  • 1 small red onion, chopped
  • 1 small sweet red pepper, chopped
  • 1 Tbls. canola oil
  • 6 c. (about 4 oz.) fresh spinach, coarsely chopped
  • 6 large eggs, beaten
  • 10 (8-inch) multigrain tortillas, warmed - see Note below
  • 3/4 c. crumbled queso fresco or low-fat feta cheese
  • guacamole and salsa, optional
  • saran wrap or foil

Instructions

Spray a little non-stick cooking spray in a large skillet. Add sausage and cook over medium heat until no longer pink, 6-10 minutes, breaking into crumbles. Remove from pan onto a paper plate lined with paper towel to absorb grease. Set aside.

In same skillet, heat a little oil. Add potatoes, onion and pepper; cook, stirring, until tender (only 5-7 minutes).

Add spinach; stir until wilted, 1-2 minutes. Remove contents of skillet to large bowl.

Add a little butter or margarine to fry pan and stir in eggs; cook, stirring to scramble, until firm. Add eggs to bowl with peppers, potatoes, onions and spinach. Stir in cooked sausage.

Spoon 1/2 cup filling across center of each warmed tortilla; sprinkle with a little cheese. Fold bottom, then each side over filling and roll up.

Wrap each burrito in either foil or saran wrap depending on how you will be using and heating them. See below explanation.

*If not eating right away, wrap individual burritos in saran wrap to freeze for future use.

Heating on Grill or over Campfire: Wrap burritos in foil. Prepare campfire or grill for medium heat. Place foil-wrapped burritos on a grill grate over a campfire. Warm until heated through (20-25 minutes), turning occasionally.

Serve with guacamole and or salsa, if desired

FREEZER INSTRUCTIONS: Cool filling before making burritos. Individually wrap burritos in saran wrap and freeze in a 1-gallon Ziplock freezer bag. Freeze for up to 1 month. To warm, thaw overnight in refrigerator, unwrap from saran wrap and microwave to warm.

If using Pre-made & Frozen Burritos while Camping: Wrap burritos in foil, then saran wrap and place in a ziplock bag before freezing. Thaw frozen burritos in refrigerator overnight. Remove saran wrap before heating foil wrapped burritos on grill or over campfire.

NOTE: You can also use whole wheat or white "soft" tortillas as well.
