Bread Pudding with Lemon Sauce

Ingredients
- 4 c. day old good white bread cubes - (1/2 - 3/4 of a loaf)
- 2 c. scald milk (cook until it just starts to boil)
- 2-3 c. sliced and peeled apples (golden delicious, macintosh or granny smith)
- 3 eggs
- 1/2 c. white sugar
- 1 t. vanilla
- 1/3 c. soft butter
- 1 t. cinnamon
- 1/2 t. salt
Lemon Sauce
- 1 c. sugar
- 1 juice of lemon
- 2+ Tbls. cornstarch
- grated lemon rind is optional
- 1 c. cold water
- 1 drop of yellow food coloring, optional
- 1 t. butter
Instructions
Break up bread (without crust) and put into a lightly greased loaf pan or deep 1-1/2 qt. casserole dish. Pour over scald milk. Let cool while preparing the following:
In separate bowl beat 3 eggs and add sugar, vanilla, butter, cinnamon and salt.
Pour the above over the bread and milk. Put in sliced apples and mix lightly with your hands. Bake at 350 degrees for 40 minutes.
Serve with warm lemon sauce.
Lemon Sauce: Cook sauce ingredients until thick and clear and add 1 teaspoon of butter.
