Bran Muffins II

Yes, no eggs! Very moist and easy.

Ingredients

  • 1 c. boiling water
  • 2 c. All-Bran cereal
  • 1-1/2 c. white sugar
  • ½ c. butter
  • 2-1/2 c. unbleached all-purpose white flour
  • ¾ t. baking soda
  • 1 t. cinnamon, optional
  • 2 c. low-fat buttermilk
  • 1 c. raisins, optional

Instructions

In a small mixing bowl, combine cereal and boiling water. Let stand for 20 minutes.

In another larger mixing bowl, cream together sugar and butter. Stir in hot cereal.

Add flour, baking soda, cinnamon if using and buttermilk; mix well.

Spoon batter into 2 muffin pans that have been sprayed with non-stick spray or lined with cupcake liners.

Bake at 350 degrees for 20-25 minutes.

NOTE: Makes 24 muffins
