Bran Date Nut Bread

A real favorite of ours
It is a favorite of our over the Christmas holidays.


Ingredients
- 1-1/2 c. boiling water
- 1 c. chopped dates
- 1 c. All Bran pellets or buds
- 2 c. light brown sugar
- 2 Tbls. melted butter
- 1 egg, slightly beaten
- 2 c. all-purpose unbleached white flour
- 2 t. baking soda
- 1/2 t. cinnamon
- 2/3 c. chopped pecans or walnuts
Instructions
Boil water and pour over dates; add bran pellets and cool. Add brown sugar, butter and egg. Mix well.
Add remaining dry ingredients and fold in nuts.
Pour batter into 2 large greased and floured large loaf pans or use 4 greased and floured mini loaf pans.
Bake at 350 degrees for 50-60 minutes. If using mini loaf pans, only bake 40-45 minutes.
When bread is done, let pans stand about 5 minutes, loosen sides before removing and cool on wire rack.
NOTE: Loaves freeze well. Wrap in Saran Wrap, then foil. Place in a ziplock bag and put into freezer. Thaw or warm slices in microwave.
