Blueberry Sour Cream Muffins

Ingredients
- 1/3 c. soft butter
- 1 c. white sugar
- 1 egg
- 1 t. vanilla
- 2 c. all-purpose unbleached white flour
- 2 t. baking powder
- 3/4 c. milk
- 1/2 c. low-fat sour cream
- 1 c. blueberries (fresh or frozen)
Instructions
In a mixing bowl, with an electric mixer, cream butter or margarine, sugar, egg and vanilla.
Add dry ingredients alternately with milk and sour cream.
Gently fold in blueberries.
Spoon into greased or paper lined muffin cups until 2/3 full.
Bake at 375 degrees for 20-25 minutes. Remove to wire rack.
