Beef & Barley Soup (Slow Cooker)

Ingredients
- 1 Tbls. canola oil
- 1-1/2 lbs. ground sirloin (or ground chuck)
- 2 Tbls. tomato paste
- 1 medium onion, diced
- 2 large carrots, diced
- 2 stalks celery, diced
- 2 Tbls. Worcestershire sauce
- 1 Tbls. pure cane sorghum
- 2 t. smoked sea salt
- 2 t. dried oregano
- 1 t. smoked black pepper
- 1 bay leaf
- 28 oz. can diced petite tomatoes
- ½ c. barley (not instant)
- 5 c. beef stock (Kitchen Basics)
- Parmesan cheese, grated (for serving)
Instructions
Heat oil in a large skillet over med-high heat. Add the ground beef and brown until no longer pink.
Add tomato paste and cook for another 2 minutes.
Pour the meat mixture into slow cooker or crock pot, along with the remaining ingredients, except the cheese and stir to combine.
Cook on HIGH for 4 to 6 hours or LOW for 6 to 8 hours.
Serve with grated parmesan cheese on top
