Chia Pudding: Banana & Peanut Butter

Keep it chilled until you’re ready to eat for the best texture and flavor.
If you like it sweeter, you can mix in some chocolate chips.
You can layer it with yogurt for a parfait-style treat.

Can eat as a dessert or for breakfast

Ingredients

  • 4 Tbls. chia seeds
  • 1 c. of milk
  • 1 t. vanilla extract
  • 1 Tbls. creamy peanut butter, softened (Jiff Natural)
  • pinch of salt
  • 1 ripe banana, sliced
  • 1-1/2 Tbls. peanut butter, divided
  • 1 Tbls. maple syrup optional for serving

Instructions

In a medium bowl, combine the chia seeds, milk, vanilla extract, tablespoon of soft peanut butter and a pinch of salt. Stir well to ensure the chia seeds are evenly distributed.

Cover the bowl and refrigerate overnight to allow the chia seeds to absorb the liquid and form a pudding-like consistency. Stir again, after 30 minutes of being in refrigerator.

Divide the chia pudding into two servings.

When ready to serve, peel and slice banana.

Top each serving with sliced banana, a dollop of peanut butter and drizzle with a little maple syrup, if desired.

Stir before eating.
