Banana Nut Muffins

Ingredients
- 1 c. all-purpose unbleached white flour
- 1 c. whole-wheat pastry flour
- 1 t. baking powder
- 1 t. baking soda
- 1/4 t. salt
- 1/2 c. butter, softened
- 1/2 c. white sugar
- 2 eggs
- 1-1/2 c. mashed ripe bananas (about 4 medium)
- 1 t. vanilla
- 1/4 c. milk (or low-fat buttermilk)
- 1 c. broken walnuts or 1/2 c. mini chocolate chips
Instructions
In a large bowl, stir together flours, baking powder, baking soda and salt.
In another bowl cream butter and sugar until light and fluffy; beat in eggs. Stir in banana, milk and vanilla.
Add dry ingredients and stir just to combine; stir in walnuts or mini chocolate chips.
Spoon batter into greased or paper lined muffin cups until 2/3 full.
Bake at 375 degrees for 20-25 minutes.
Cool 5 minutes before removing from pan; finish cooling on wire rack.
NOTE: These freeze well (warm in microwave)
