Banana Chocolate Chip Muffins

Ingredients

  • 1/2 c. butter
  • 1 c. white sugar
  • 1 large egg
  • 1/3 c. milk
  • 1/2 t. ground allspice
  • 1/2 t. ground nutmeg
  • 2 medium size ripe bananas, mashed (3/4 cup)
  • 1 c. whole-wheat pastry flour
  • 1 c. all-purpose unbleached white flour
  • 1-1/2 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 3/4 cup mini chocolate chips

Instructions

In a medium mixing bowl, cream together butter and sugar until smooth.

Beat in the egg, nutmeg, allspice, banana and milk.

Stir in dry ingredients and blend well.

Spoon batter into 12 lightly greased or paper lined muffin cups until 2/3 full.

Bake at 350 degrees for about 20-25 minutes. Remove from oven.

Let cool in pan for 5-10 minutes; then remove to wire rack and cool completely.
