Banana Chocolate Chip Cookies
A healthier version of a chocolate chip cookie
Ingredients
- 3/4 c. unsalted butter, softened
- ½ c. white sugar
- ½ c. brown sugar
- 1 egg
- 1-1/2 t. vanilla
- ½ c. ripe banana, mashed (1 large banana)
- 1 c. unbleached white all-purpose flour
- ½ c. whole wheat flour
- ¾ t. salt
- ½ t. baking soda
- 1 c. old fashioned oats
- 8 oz. Ghirardelli chocolate chips or chunks (dark or semi-sweet)
Instructions
In a mixing bowl, using an electric mixer, cream butter, margarine and sugars.
In a separate small bowl, beat egg and vanilla until fluffy, then add to butter/sugar mixture.
Mash banana and add to batter.
By hand, stir in flours, salt, baking soda and oats until blended. Fold in chocolate chips.
Chill dough for a few hours.
Using a cookie scoop, drop rounds of dough onto ungreased baking sheets.
Bake at 350 degrees for 12-15 minutes or until browned.
