Banana Bread with Cream Cheese filling

The cream cheese filling sends this banana bread over the top!

Ingredients

  • 1/2 c. butter, softened
  • 1 c. white sugar
  • 2 eggs
  • 3 ripe bananas, smashed
  • 1 t. baking soda
  • 3 Tbls. low-fat sour cream
  • 2 c. unbleached all-purpose white flour
  • 1 t. salt
  • 1 c. chopped walnuts

Cream Cheese Filling

  • 8 oz. package low-fat cream cheese, softened
  • 1/3 c. white sugar
  • 1 egg
  • 1 Tbls. unbleached all-purpose white flour

Instructions

Cream Cheese Filling: Using an electric hand mixer, combine cream cheese, sugar, egg and flour until creamy. Set aside.

With electric hand mixer, combine butter, sugar and eggs. Add smashed bananas.

Dissolve the sour cream and baking soda; add to banana batter.

Stir in flour and salt; fold in nuts.

Divide half of the batter into 2 greased and floured medium size loaf pans.

Spread cream cheese mixture evenly over banana batter in each pan.

Spread remaining banana batter on top. Swirl batter and cream cheese just a little, if you wish too.

Bake at 350 degrees for about 1 hr. Bake 40-45 minutes for mini loaf pans.

NOTE: This batter will also make 4 mini loaf pans. Freezes well.
