Banana Bread with Cherries & Mini Chocolate Chips

A Christmas favorite
This was my grandmother’s recipe and when I make it every Christmas, I think of her.

Ingredients

  • 1/2 c butter
  • 1 c. white sugar
  • 2 eggs
  • 3 bananas, smashed
  • 1 t. vanilla
  • 2 c. all-purpose unbleached white flour
  • 1 t. baking soda
  • 1/2 c. mini chocolate chips
  • 1/2 c. maraschino cherries, cut up (or use dried cherries)

Instructions

Cream butter, sugar and eggs. Mash bananas with vanilla and add.

Stir in flour and baking soda. Fold in chocolate chips and cherries.

Pour batter into a greased and floured large loaf pan (or divide among 3 mini loaf pans).

Bake at 350 degrees for 50-55 minutes for the large loaft (40 minutes for mini loaf pans).

When done, loosen edges with a knife and let stand in pan for 5 minutes before removing to wire rack to cool.
