Banana Bread (Whole Wheat)

Ingredients
- 1/3 c. canola oil
- 2 eggs
- 1-1/4 c. brown sugar
- 2/3 c. plain nonfat yogurt
- 1 t. vanilla
- 1-1/2 c. mashed ripe bananas (about 4)
- 2-1/2 c. whole wheat pastry flour
- 1 t. baking soda
- 1 t. salt
- 1/3 c. chopped walnuts, optional
Instructions
Mix bananas and vanilla; set aside. Mix oil, eggs, brown sugar and yogurt. Stir in banana mixture, mixing well.
Fold in dry ingredients and nuts.
Pour batter into a greased and floured 9-inch loaf pan.
Bake at 350 degrees for 50-60 minutes. Loosen edges with a knife and let stand in pan for 10 minutes before removing to wire rack to cool.
NOTE: Also makes 3 mini loaves; only bake 40-45 minutes.
