Balsamic Vinaigrette II Dressing

Good on any salad. Will keep 1 week in refrigerator.

Ingredients

  • 1/4 c. good olive oil
  • 1/8 c. (2 Tbls.) good balsamic vinegar
  • 1/2 t. honey
  • 1/2 t. Dijon mustard
  • 1/2 of a shallot
  • 1 small garlic clove, minced
  • salt and pepper to taste
  • 1-2 Tbls. of water to thin, if desired.

Salad Ingredient Ideas

  • tomatoes
  • black olives
  • garbanzo beans (rinsed and dried)
  • bell peppers (green, yellow, red, and/or orange)
  • scallion or red onions
  • mushrooms
  • feta cheese

Instructions

Add oil, balsamic, honey, Dijon mustard, shallot, garlic, salt and pepper together in a small bowl or jar.

Whisk or shake vigorously until well combined. If you prefer to thin a bit, add a little water.

Store in refrigerator.
