Balsamic Vinaigrette II Dressing
Good on any salad. Will keep 1 week in refrigerator.

Ingredients
- 1/4 c. good olive oil
- 1/8 c. (2 Tbls.) good balsamic vinegar
- 1/2 t. honey
- 1/2 t. Dijon mustard
- 1/2 of a shallot
- 1 small garlic clove, minced
- salt and pepper to taste
- 1-2 Tbls. of water to thin, if desired.
Salad Ingredient Ideas
- tomatoes
- black olives
- garbanzo beans (rinsed and dried)
- bell peppers (green, yellow, red, and/or orange)
- scallion or red onions
- mushrooms
- feta cheese
Instructions
Add oil, balsamic, honey, Dijon mustard, shallot, garlic, salt and pepper together in a small bowl or jar.
Whisk or shake vigorously until well combined. If you prefer to thin a bit, add a little water.
Store in refrigerator.
