Baked Pesto Chicken

Simple and quick to make, great flavor too
Ingredients
- 4 boneless, skinless chicken breasts
- salt and fresh ground black pepper, season as desired
- ½ c. basil pesto (Mezzetta Napa Valley Bistro), divided
- ½ c. shredded mozzarella cheese
Instructions
Preheat oven to 375 degrees.
Trim all visible fat from chicken, then cut each chicken breast lengthwise into 3 pieces.
Coat a 9 x 12-inch baking dish with non-stick spray or brush with a little olive oil.
Spread ¼ cup basil pesto over the bottom of the dish. Lay chicken strips over pesto, then spread ¼ cup more basil pesto over the chicken.
Cover the baking dish with foil and bake for 40-50 minutes, just until chicken is cooked through.
Remove foil and sprinkle with mozzarella cheese and continue baking until cheese is melted and slightly browned on top.
There will be some flavorful juice in the bottom of the dish when done, so you may want to serve with rice to soak up the juice, or spoon the juice over the chicken.
