Oatmeal: Baked Maple Pecan Oatmeal with Bananas

Filled with wholesome oats, pecans, bananas and lightly sweetened with maple syrup.

Ingredients

  • 2 c. old fashioned rolled oats
  • 1/4 c. pecans, chopped
  • 1 t. baking powder
  • 1-1/2 t. ground cinnamon
  • 1/4 t. fine-grain sea salt
  • 2 c. unsweetened almond milk (regular milk is fine)
  • 1/4 c. pure maple syrup, plus more for serving
  • 1 large egg, or 1 Tbls. ground flaxseed
  • 2 Tbls. canola oil or melted coconut oil
  • 2 t. pure vanilla extract
  • 2 ripe bananas, sliced
  • ¼ c. pecans, chopped
  • cooking spray

Serving choices

  • milk
  • brown sugar
  • maple syrup

Instructions

Preheat the oven to 375 degrees.

Spray an 8×8-inch square baking dish with cooking spray.

In a large bowl, mix the oats, ¼ cup pecans, baking powder, cinnamon, and salt.

Add in the milk, maple syrup, egg, oil and vanilla. Fold in sliced bananas and stir well to combine.

Carefully pour oatmeal mixture into the prepared baking dish.

Scatter another 1/4 cup pecans across the top.

Bake for 35 to 40 minutes, until the top is nicely golden. Check after 30 minutes.

Remove from the oven and let cool for a few minutes.

To Serve: Portion out 4 servings. Add a little milk and sprinkle with a little brown sugar (not needed) or just drizzle each portion with maple syrup (if you want it to be a bit sweeter).

NOTE: Warm leftovers up in microwave. Add a little milk before warming.
