Oatmeal: Baked Cranberry Maple Pecan
Perfect for Christmas morning or anytime throughout the cold winter months.
Ingredients
- 2 c. old fashioned rolled oats
- 1-1/2 t. ground cinnamon
- 1 t. baking powder
- 1/2 t. kosher salt
- 1/4 c. chopped pecans, toasted
- 1-3/4 c. unsweetened almond milk, or milk of choice
- 5 Tbls. maple syrup
- 1 egg
- 1-1/2 t. vanilla extract
- 1 t. orange zest
- 1 c. fresh or frozen cranberries, halved
Cinnamon Maple Glaze
- 1/2 c. powdered sugar
- 1/4 t. ground cinnamon
- pinch of salt
- 2 t. maple syrup
- 2-3 t. milk
Instructions
Spray a 9x9 or similar size baking dish with cooking spray.
In a large bowl stir together the oats, cinnamon, baking powder, salt and pecans.
In a separate bowl whisk together the milk, maple syrup, egg, orange zest and vanilla extract.
Pour the wet ingredients in with the dry and stir until combined. Stir in the cranberries.
Pour the mixture into the prepared baking dish and bake at 350 degrees for 35 minutes or until the top is golden and the oatmeal is set. Let it rest for 5-10 minutes before serving.
Glaze: While the oatmeal rests, whisk together all the ingredients for the glaze. Drizzle over the oatmeal and cut into squares for serving.
