Bagel Sandwiches: Pear Apple Cheese Caramelized Onion

These are absolutely delicious! Worth the time to make.

Ingredients

  • 3 Tbls. olive oil (not extra-virgin)
  • 1 large yellow onion, thinly sliced
  • sea salt
  • 2 Everything Bagels, sliced (we use the Bagel Thins)
  • 4 thin slices of cheese (co-jack, cheddar or Swiss)
  • 4 Tbls. fig preserves
  • 2 handfuls of fresh spinach
  • ½ ripe apple, sliced thin (I used gala)
  • ½ ripe bosc pear, cored and sliced thin
  • 2 eggs, fried
  • 2 t. butter
  • salt and pepper to taste

Instructions

Heat oil in a med-large Teflon skillet over med heat. Add the sliced onions and sauté, stirring occasionally until onions begin to sweat and turn translucent (about 8 minutes). Sprinkle liberally with sea salt, reduce heat to low and continue cooking, stirring occasionally, until onions are soft, golden-brown and caramelized (about 25-30 minutes), they shouldn't be crunchy. Set aside while you prepare the bagels.

Preheat oven to the high broil setting.

Start to fry eggs. Place a little butter in medium Teflon coated fry pan. Crack each egg and cook until whites are set enough to flip over. Flip over and cook until the yolk is cooked to your desired doneness. Remove from burner when eggs are done.

Place sliced bagels on a baking sheet. Toast on the top rack of oven under the broiler until toasted (about 1-2 minutes). Remove bagels from oven and add a slice of cheese on all four slices of bagel. Place back in hot oven until melted (about 1 minute). Remove pan and turn off broiler/oven.

Smear 1 tablespoon of fig preserves over each cheesy bagel slice.

Top the bagel bottoms with spinach leaves, sliced apple, sliced pear, caramelized onions and egg. Place the bagel tops on top, place back in warm oven for 1-2 minutes. Remove, slice in half and serve.
