Bacon, Egg & Cheese Breakfast Wreath

Festive for Christmas made Christmas 2014

Ingredients

  • 1 can Pillsbury Crescent dough (8 count)
  • 8 slices fully cooked center-cut bacon (don't cook too crisp or you won't be able to bend it)
  • 1 Tbls. butter
  • 5 large eggs
  • 1/3 c. diced red and green pepper, optional
  • 1 Tbls. diced onion, optional
  • 1 c. shredded colby and monterey jack cheese
  • salsa or parsley for serving, if desired

Instructions

Preheat oven to 375 degrees.

Heat butter in a medium Teflon fry pan. Add eggs, (peppers and onions, if using) and scramble until eggs are set. Remove pan from burner until read to assemble.

Lay out crescents on large cookie sheet lined with parchment paper or use a large baking stone (no parchment paper needed). Shape into a circle, points facing outwards and wide ends overlapping a bit.

On each crescent piece, lay 1 bacon slice.

Place 1/3 cup of the cheese in a circle on the wide parts of the crescent pieces, forming a circle. Add egg mixture on top of cheese spreading out evenly in a circle. Add another 1/3 cup cheese on top of the eggs.

Fold each crescent piece over to form a circle. Start with the outward point and bring back tucking the point under the wider end. Work your way around forming a wreath shape.

Add the rest of the cheese to the top and bake for 17 minutes or until crescents are done and golden brown.

Serve hot, slicing into 8 pieces.

NOTE: Serve with salsa or chopped parsley if desired.
