Avocado Feta Salsa

Ingredients

  • 2-3 plum or roma tomatoes, remove seeds and dice small
  • ½ of a med. red onion, chopped (1/3 - 1/2 c.)
  • 2 large ripe Hass avocado, peeled, pitted and diced small
  • 2 large cloves garlic, minced or 1 Tbls. minced jarred garlic
  • 1 Tbls. fresh chopped oregano (1 t. dried)
  • 1 Tbls. fresh chopped parsley (1 t. dried)
  • Pinch of red pepper flakes, optional
  • 1 Tbls. red wine vinegar
  • 1 Tbls. olive oil
  • 4 oz. crumbled low-fat feta cheese
  • Pita chips or tortilla chips

Instructions

In a bowl, gently stir together tomatoes, avocados, onion and garlic. Mix in parsley, oregano and red pepper flakes if using.

Gently stir in olive oil and red wine vinegar. Then stir in the feta. Adjust garlic and onion or seasoning amounts if desired.

Serve with pita chips and/or tortilla chips
