Apricot Cranberry Oatmeal Cookies
So good and a nice alternative to the standard oatmeal cookie recipe.
Ingredients
- 1 c. butter, softened
- 1/2 c. white sugar
- 1 c. light brown sugar
- 2 large eggs
- 1 t. almond extract
- 3/4 c. whole wheat pastry flour
- 3/4 c. unbleached all-purpose white flour
- 1 t. baking soda
- 1 t. ground cinnamon
- 1/2 t. salt
- 3 c. oatmeal, uncooked
- 1 c. chopped dried apricots
- 3/4 c. dried cranberries
- 3/4 c. sweetened flaked coconut
- 3/4 c. slivered almonds
Instructions
In a large bowl, with a mixer on medium speed, beat butter and sugars until creamy. Reduce speed to low; beat in eggs and extract.
By hand, stir in dry ingredients until well blended.
Stir in dried fruits, coconut and almonds.
Chill dough for several hours before baking.
Drop dough by rounded tablespoons, 2 inches apart, onto ungreased cookies sheets.
Bake at 350 degrees for 14-15 minutes, or until tops are golden.
Cool cookies on wire racks lined with paper towel to absorb the grease.
