Applesauce Bread

Makes 1 large loaf or 3 mini loaves.

Ingredients

  • 3/4 c. white sugar
  • 2 large eggs
  • 1/2 c. canola oil
  • 1-1/2 t. vanilla
  • 1/2 c. whole wheat pastry flour
  • 1 c. all-purpose unbleached white flour
  • 1/4 t. baking powder
  • 1/2 t. baking soda
  • 1-1/2 t. cinnamon
  • 1/2 t. allspice
  • 1/4 t. nutmeg
  • 1/2 t. salt
  • 1/2 c. oatmeal
  • 3/4 c. applesauce, unsweetened preferred
  • 1/2 c. chopped walnuts
  • ½ c. raisins, optional

Instructions

Lightly grease and flour a 9" x 5" loaf pan or 3 mini loaf pans.

In a large bowl, mix together sugar, eggs, oil and vanilla.

In a separate bowl, mix together the flours, baking powder and soda, spices, and salt, and add them to the wet ingredients in the bowl.

Stir in the rolled oats, applesauce, walnuts and raisins if using.

Pour the mixture into the prepared pan. Bake at 350 degrees for 50 to 55 minutes (35-40 minutes for mini loaves) or until a toothpick inserted into the center comes out clean.

Remove the bread from the oven, and cool completely.
