Apple Salad with Maple Vinaigrette
Perfect in Fall
Ingredients
- 4-5 c. torn mixed salad greens
- 1 large tart apple, chopped
- 2 Tbls. red onion, thinly sliced
- 1/4 c. chopped walnuts, toasted
- 1/4 c. raisins
- crumbled goat cheese, optional
Dressing
- 1/4 c. frozen apple juice concentrate, thawed
- 2 Tbls. cider vinegar
- 2 Tbls. maple syrup
- 2 Tbls. spicy brown mustard
- 2 Tbls. canola oil
- 1/4 t. salt & 1/8 t. pepper
Instructions
In a large bowl, combine the salad greens, apples, onion, walnuts and raisins.
In a small bowl, whisk dressing ingredients. Drizzle over salad, add goat cheese and toss to coat.
