Apple Puff Pancake

Ryan and Ben made for Mother's Day, 1998

Ingredients

  • 4 Tbls. butter
  • 3-4 granny smith apples (peeled & sliced 1/8" thick)
  • 1/4 c. brown sugar
  • 1 t. cinnamon, divided
  • 1/8 t. nutmeg
  • 6 large eggs, room temperature
  • 1-1/2 c. milk
  • 1 c. all-purpose unbleached white flour
  • 3 Tbls. sugar
  • 1 t. vanilla
  • 1/2 t. salt
  • powdered sugar

Instructions

In a 9 x 13" baking dish, melt butter in pre-heated 375 degree oven. Arrange apple slices over melted butter or margarine. Return to oven and bake until apples are soft (about 10-15 minutes).

In a small bowl, combine brown sugar, 1/2 t. cinnamon and nutmeg. Remove pan from oven and sprinkle over apples. Set aside.

In a blender, blend eggs, milk, flour, sugar, vanilla, salt and 1/2 t. cinnamon. Blend until smooth (30 seconds).

Pour over apples and bake for 35 minutes at 375 degrees.

Sprinkle with powdered sugar.

NOTE: Serve warm with syrup.
