Apple Nut Bread

A little labor intense, but worth it. Moist and delicious. Recipe came from a co-worker friend from my AAL days.

Ingredients

  • 4 eggs
  • 3/4 c. unsweetened applesauce
  • 3/4 c. canola oil
  • 1-1/2 c. white sugar
  • 1 t. vanilla
  • 3 c. all-purpose unbleached white flour
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1/2 t. salt
  • 3 c. granny smith (or macintosh) apples, peeled & chopped
  • 1 c. chopped walnuts, optional

Topping

  • 1/3 c. all-purpose unbleached white flour
  • 2 Tbls. white sugar
  • 1/2 t. ground cinnamon
  • 2 Tbls. brown sugar
  • 2 Tbls. oatmeal
  • 4 Tbls. butter

Instructions

Mix oil, applesauce, sugar, vanilla and eggs using an electric mixer on low speed.

Add flour, cinnamon, baking soda and salt. By hand, fold in apples and nuts.

Grease and flour 4 mini loaf pans or 2 medium-size loaf pans. Divide batter evenly among pans.

Mix topping ingredient until crumbly (a few pulses in a mini food processor works slick). Sprinkle on top of batter.

Bake at 325 degrees for about 45-50 minutes for mini loaves and 55-60 minutes for medium loaves.

Remove from pan and cool on rack.

NOTE: Freezes well
