Apple Muffins with Walnut Streusel

Ingredients

  • 1-1/4 c. all-purpose unbleached white flour
  • 1/2 c. whole wheat pastry flour
  • 3/4 c. ground flaxseed (see note below)
  • 3/4 c. brown sugar
  • 1 t. baking powder
  • 1 t. baking soda
  • 1/4 t. salt
  • 1/2 c. low-fat milk
  • 1/2 c. orange juice
  • 1 Tbls. butter, melted
  • 1 t. vanilla
  • 2 large eggs, lightly beaten
  • 2 c. finely chopped granny smith apple (2 apples)
  • 1/2 c. golden raisins

Streusel

  • 1/4 c. finely chopped walnuts
  • 2 Tbls. brown sugar
  • 1 Tbls. chilled butter, cut into small pieces

Instructions

Combine flours, flaxseed, brown sugar, baking powder, soda and salt. Stir with a whisk to mix. Make a well in center of mixture.

Combine milk, orange juice, melted butter, vanilla and eggs, stirring with a whisk; add to flour mixture and stir just until moistened.

Fold in apples and raisins.

Spoon batter into 18 muffin cups (or 6 extra large muffin cups and use the leftover batter for regular size muffins), coated with non-stick cooking spray.

To prepare streusel, combine ingredients in a small bowl, stirring with a fork until crumbly. Sprinkle evenly over batter.

Bake at 350 degrees for about 20 minutes or until muffins spring back when touched lightly. Remove from pans and place on wire rack.

Serve warm or at room temperature.

NOTE: If you don't have flaxseed on hand, you can substitute 1/4 c. canola oil or 1/4. unsweetened applesauce.
